Pumpkin Spice Bread

Happy Thanksgiving!

I'm obsessed with pumpkin in the fall. Here is a recipe I tried last night and LOVED! My husband isn't a fan of pumpkin and even he liked it.  It's real easy to make too!

Ingredients:

  • 2 cups canned pumpkin
  • 3 cups sugar
  • 1 cup water
  • 1 cup vegetable oil
  • 4 eggs
  • 3 1/3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 3/4 teaspoon ground cloves

Directions:

Heat oven to 350. in a large mixing bowl, combine pumpkin, sugar, water, vegetable oil and eggs. Beat until well mixed. Measure the flour, baking soda, cinnamon, salt, baking powder, nutmeg and cloves into a separate bowl and stir until combined. Slowly add the dry ingredients to the pumpkin mixture, beating until smooth. Grease two 9 x 5 inch loaf pans and dust with flour. Evenly divide the batter between the two pans. Bake for 60-70 minutes or until a toothpick inserted in center comes out clean. Cool for 10-15 minutes, then remove from pans by inverting onto a rack and tapping the bottoms. Slice and serve plain, buttered, or with cream cheese.

Note: I sprinkled icing sugar on top. YUM!!

Haircut

I finally got the courage to cut my hair last week!!! I'm always scared of getting a hair cut because they usually turn out terrible for me. Not this time! I love it! She cut off about 6 inches in total. It feels so much better. It doesn't take me forever to shower anymore. It's great.

Before and After (No I didn't colour my hair. It's the lighting)

A much needed break

As many of you know, my bestfriend lives in Alberta. We don't get to see each other very often. I miss her dearly, even though we text and call multiple times a day. She mentioned wanting to go to a concert and had no one to go with at the end of October. I thought it would be a perfect time to tell her I wanted to come visit. I've never been to Alberta. So I booked my ticket to Edmonton.

Now, don't get me wrong, I love being a stay at home mom. I feel lucky that I have been able to stay home and watch my son grow up but sometimes Mommy just needs a little fun with adults. If you know me at all, you will know that I don't go out. I mean not without Dechlan. I can count on one had all the times I've been out without Dechlan. I'm not referring to running errands or appointments, I mean out having fun. All of those outings have all been for my anniversary. I'm really looking forward to girl time.

We have a fun filled weekend planned. I'm not going for long. I'm going from the 27th to the 30th of October. It will give me my bff fix. It's going to be a much needed break so this mommy can let her hair down a bit.

Picture Perfect 2nd Edition

Birthday Pirate Bag!

We Got To Pet Stingrays! And A Shark!!

Late Night Snuggles with Mommy. He had a tummy bug.

I'm still here!

I've been so busy lately! Back to school routines have been a bitch. Dealing Dechlans doctor a lot lately has also kept me busy as well. The reason we've been dealing with Dechlans doctor so much lately is because he has finally gotten an official diagnosis. She's been helping us with different resources and finding tricks to help him as best we can. She had thought he had ADHD but upon more observation she has diagnosed him with Mild Global Developmental Delay. What that means is that he isn't developing at the 'Normal' level that he should be. She has assessed that he is about 24 months delayed. Now we're fighting to get him the proper support at school. It's a very frustrating process.

We also had a wonderful visit from my brother! He came for Dechlans birthday. It's hard to believe that my baby is already 5 years old. It was a complete surprise for D. He had no idea his Uncle Chris was coming to see him. He was only here for 5 days but it was great. On his actual birthday we had a fun filled day. We went to the Disney store. They do this very cute ceremony every single morning. They get the help from a child to use the big Disney key to open the store. Once it's all done, the child gets his own miniature key. Dechlan simply loved it. He had so much fun. He was given gift certificates from a family member so he got to pick out his own toys. His Uncle Chris bought him a ton of toys and movies. He was so spoiled! They gave him a little button that said Happy Birthday Dechlan and even put him name up on the screen. He just loved it! Then we went to Starbucks where he got some juice and him and I shared a pumpkin scone. Then home to Skype with all the Grandparents. We then made our way to the movies to go see Paranorman and Mucho Burrito. He had so much fun. Once we got home, he got to play with all his new toys and have dinner. I made his favourite, rice, coleslaw and Rainbow Trout. He was so surprised when he saw his Pirate cake. Overall his birthday was great.

Sunday, Nick and Chris went to see a movie while I baked cupcakes for Chris' birthday. And Monday we went to the Zoo. It was a beautiful day. It wasn't busy and we had a ton of fun. Sadly we had to drop Chris off at the airport that night.

So I should be back to regular blogging.
