I am ashamed to admit that my child has never really been forced to try new foods. We have not always eaten healthy. Honestly, we used to eat a whole lot of fast food/takeout/delivery. I'm not proud of it. This year is all about making good choices. I'm also going to admit that in the last 2 weeks, we haven't gone back to our old habits. I've made dinner every day for the last 2 weeks. Yes, that is a feat for me, One that I'm proud of. We have only eaten out twice and both times were at Subway.
For dinner, I'm really trying to focus on getting lean meat, complex carbs from vegetables and complex carbs from good starch. This for us, is kind of new. Since we started this new way of life, Dechlan has been much more open to eating good foods. Like a lot of children with special needs, we have a hard time getting him to eat. Now that we are eating better, he is eating better. We do have a bit of a fight when it comes to him eating salad or green beans, but he does eat them. He's been great with trying new foods. I made turkey soup last week and loaded it up with carrots, butternut squash, leeks, onion, celery and potato and loved every single vegetable in it. He even went back for seconds which is very rare. Then I made spaghetti squash with vegetable tomato sauce and he adored it. He's been asking for it for dinner ever since. Tonight, I made chicken, baked potatoes, baked sweet potato for me(I hate white potatoes) and brussel sprouts. I cut them open and put some nonfat sour cream on them and he gobbled them up without a fuss. It's amazing!!
We have been trying to find healthy snacks for him. He loves to snack and I'd love to get him into eating healthier snacks. Tonight I got him to try almonds and he loved them. He does love strawberries and apples but I'm trying to find other healthy snacks for him. I'm thinking plain popcorn(which we know he loves).
So my question is, what kind of healthy snacks do you feed your picky eaters?
After being sick for over a month, I'm finally better. My voice is back for the most part and I'm feeling good. I was having an awful time sleeping for a while there but Nick and I are making a new sleeping schedule for ourselves. We're going to head to bed around 9PM and read and then at 10PM we go to sleep. It worked great for me! I slept until 7AM! I was asleep before 12 which is a huge change from falling asleep around 4 or 5 in the morning.
This is my last weekend with my hubby and kiddo home during the day. Nick is back to work on Monday after several months on medical leave. Dechlan is back to school on Monday as well (Thank goodness! He's driving me nuts!!) It's going to be quiet but I will be able to get more stuff done with 2 less people in my way.
We are on day 4 of clean eating and I must say, It's much easier than I thought it would be. It helps to have a partner in crime. He's been keeping me on track. I love it.

I hope everyone had a wonderful Christmas and New Year. I'm finally feeling better. Every year I always make resolutions and rarely keep them. Last year was the first year I reached my goals. I lost 35lbs and I read 37 books. This year, I just want to focus on my family and our health. We have started eating healthy and I'm determined to rarely eat out. Our biggest issue is eating out and eating poorly. I also want to get all 3 of us getting active for at least 1 hour per day. I really don't see that as a hard thing to do.
So here are my goals for 2013:
- Eat out less than 4 times a month
- Get active 1 hour per day
- Read 20 books
- Learn to knit something more complicated than just a basic scarf
So there it is! Let's see if I can do it!
